Recently, I was able to fill in for a sick instructor and
teach a two day InfoPath course that integrated with SharePoint. I was excited,
but nervous at the same time, since this would be one of the first times
teaching a class like that!
It started out last Thursday and ended on Friday. It went
off without any major issues and I was able to teach the class about the benefits

Yes, there are some things that users would say, just create
a custom list and I would argue that you should create a custom list, but
customize the form too! InfoPath is way too powerful to be sitting in your
start menu untouched.
